Sweet Potato Soup
Ingredients
- 2 teaspoon canola oil
- 1/2 cup chopped onion
- 3 cups (1/2-inch) cubed peeled sweet potato
- 1 1/2 cups (1/4-inch) sliced peeled carrots
- 1 tablespoon grated ginger
- 2 teaspoon curry powder
- 3 cups chicken broth
- 1/2 teaspoon salt
Recipe
Heat oil in a large pan. Add onions and saute until tender.
Add sweet potato, carrot, ginger, and and cook for 2 minutes.
Add broth and bring to a boil.
Cover and simmer until vegetables are tender. Add in salt.
Pour in a food processor when it cools down.
Blend till smooth and soup is ready.
Sweet Potato Fries

- Sweet potatoes- 2
- Salt and pepper

Recipe
Boil the sweet potatoes till they are just 40% cooked.
Peel them and cut into chips.
Then sprinkle salt and pepper on the chips.
Preheat oven to 250 degrees C.
Place the chips in a single layer on aluminium foil and sprinkle a little oil on them.
Bake the chips for 10 minutes after placing in a baking dish.
Sweet potato chips are ready.
Sweet Potato Pudding
Ingredients
- Cooking spray/Oil
- 2 eggs
- 1/4 cup honey, divided
- 1/4 cup milk
- 1 slice whole wheat bread, crusts removed
- 2 cups mashed baked peeled sweet potato
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 2 tablespoons chopped pecans
- 2 tablespoons chopped ginger
- 1/4 cup plain Greek yogurt

Preheat oven to 350°.
Coat a 11/2-quart baking dish with cooking spray/oil.
In a large bowl, take eggs, 3 tbsp honey, milk, and bread. Beat until smooth.
Add sweet potato, vanilla, cinnamon, and allspice; beat until smooth.
Pour into prepared baking dish. Scatter pecans and ginger over top.
Bake at 350° for 25 minutes until pudding is set and slightly puffy.
Mix together yogurt and remaining 1 tablespoon honey until smooth. Top the pudding with it before serving.
Sweet Potato Wedges

- 6 medium sweet potatoes
- Cooking spray
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1/8 teaspoon black pepper
Recipe
Preheat oven to 500°.
Peel sweet potatoes; cut each lengthwise into quarters.
Place sweet potatoes in a large bowl and coat with cooking spray.
Mix together sugar, salt, and peppers, and sprinkle over potatoes. Coat the sweet potatoes well.
Arrange potatoes, cut sides down, in a single layer on a baking sheet.
Bake 10 minutes.
Turn the wedges over and bake for 10 more minutes.
Sweet Potato Dip

- 1/3 cup roasted mashed sweet potato
- 1 tablespoons plain Greek-style low-fat yogurt
- 1/4 teaspoon honey
- 1/8 teaspoon dried chipotle chile powder
