Recipe 1 – Coconut Macaroons

For this recipe, the vegetarians can have a sigh of relief as it is totally vegetarian with no use of egg as you would see for yourself. It is a cookie as you would find and go hogging for in a bakery. Being homemade, you can be sure of giving your kids a healthy dessert.

Ingredients for 8-9 macaroons:

  • Half a cup about 150 grams of condensed and sweetened milk
  • Grated coconut about 1.5 cups
  • Vanilla essence about ½ teaspoons
  • 7 to 8 cherries, sliced in halves, this is entirely optional

Take the condensed milk and pour it in a bowl to whisk. After you whisk it for a minute or two, add the coconut in batches to it. Add first half of coconut to the milk and mix well. Once it is mixed and coconut has already absorbed most of the milk, add the second batch. Now mix well until a tight dough is formed. Rub some butter on your palms as the mixture would be a bit sticky. Now make the shapes out of the dough pinching small amounts from it. You can shape it to any form you want. For best results, round is better. Do keep your oven ready for baking. If you have convection ovens, preheat them to 180 degrees before you begin with the ingredients. Now place the cherries over the macaroons, which is totally up to you.

In the preheated oven, now place the macaroons at safe distance from each other. Let it bake for around 15 minutes and check the oven. The macaroons would have turned to golden brown by now.

They are now ready to eat.

Hope you love them!

Okay here is another easy recipe for egg less muffins which your toddler would definitely love. It is prepared in good 30 minutes and is pretty easy to be made.

Ingredients for 7 muffins:

  • 1 cup wheat flour
  • ½ tsp baking soda
  • ¼ tsp cinnamon powder
  • A pinch of salt
  • ½ cup water
  • ½ cup grated jaggery
  • 1 cup chopped apples
  • ½ tbsp vinegar
  • ½ tsp vanilla essence
  • 3 tbsp olive oil

Take all the ingredients – wheat, baking soda and cinnamon powder and a pinch of salt and sieve them. Put them aside once mixed. Now rinse the apples and add lemon to them so that they don’t turn discolored.

Now in a mixing bowl, take ½ cup warm water and mix jaggery into it until dissolved. Now add vanilla essence to it. Add olive oil and vinegar one by one at this point and mix well. It is the time to add the apples to this mixture after the mixture is whisked once to avoid or kill the lumps. Place the mixture now in the muffin tray and put it in the oven for about 25-30 minutes. Keep a track of the same and once you see a clean toothpick come out of the muffin take them out of the oven. Let them cool down and then serve them to your kids.
