Healthy Rice Recipe For Kids – Toor Dal & Mixed Vegetable Rice
Rice is first food for most Indian babies. Even as they grow, rice is an easy filler food for babies and toddlers. It is an easier choice for mothers too for feeding the kids. Well boiled rice hardly needs any chewing. It is easily swallow able with just little chewing.
But plain rice alone doesn’t help in fulfilling the nutritional chart of the child. So, rice has to be combined with additional healthy ingredients. This will make the entire taste interesting to the child too.
- One cup boiled white rice.
- Half cup toor dar
- Half cup chopped vegetables (carrot, beans, green peas, etc)
- Half cup tamarind juice.
- Jagery (optional)
- Curry leaves, coriander leaves (optional)
- Masala powder of your choice. (Bisibele bath powder of any brand is best suggested for this recipe.)
- One spoon full of ghee.
- Salt for taste.
Method of preparation:
In a pressure cooker add half cup toor dal and chopped vegetables. Add some water (more than half cup) and cook.
I usually add peanuts as my daughter enjoy eating it.
In a pan, take some tamarind juice. Adding jaggery is optional. If you wish you may add small pieces of jaggery too. For the juice, soak a tiny amount of tamarind in warm water for 10 minutes. Then squeeze the loosened tamarind well in the water and discard. Some unwanted stuffs might be deposited in the tamarind juice. Thus, discard the bottom most portion of the tamarind juice too.
Boil the tamarind juice and jaggery.
Now add the boiled toor dal and vegetables to it.
Stir well. Add water if needed. Let everything boil for about 3 minutes.
Now, add salt as per taste, masala powder of your choice, chopped coriander leaves and curry leaves to the pan. I use MTR Bisi Bele Bath powder for this recipe. The powder is exclusive made for this recipe.
Add clean coriander and curry leaves at this point of time. Boil everything well for about one minute.
Now add cooked rice and mix well.
Serve hot with one spoon of fresh homemade or desi ghee.
You may also add some crisps on top of it just before eating.
